Eldon's Brown Sugar Fish Brine is so easy to use on trout, salmon, steelhead, whitefish, etc.  No MSG.  Makes 2 1/2 gallons of brine.

Ingredients: salt, brown sugar, sodium nitrite (0.75%) & 2% propylene glycol to prevent caking.

For 2 quarts of fish brine: Combine 2 quarts cold water & brine mix (5 1/2 oz for a less salty flavor or 6oz for a more salty flavor) in non metallic brining vessel: Stir well. add whole fish or fillets, submerge fish and refrigerate overnight, stirring occasionally. Next day, remove from brine DO NOT RINSE! Lay on drying racks skin side down. Process in usual manner in oven or smoker. Smoke/cook at temps starting at 150 F. ending at 170 F. Pan size trout & medium size fillets 6 to 9 hrs, large fillets upwards of 12 to 14 hrs. check often for doneness as smoking time can vary greatly. This product will cure as many fish as can be covered with the brine mixture.
