Eldon's All-Purpose Fish Brine with a hint of maple sugar is so easy to use on trout, salmon, steelhead, whitefish, etc.  Makes up to 6 gallons of brine.  No MSG.

Ingredients: Salt, cane & maple sugars, dextrose, sodium nitrite (0.75%) & 2% propylene glycol added to prevent caking.

For each quart of fish brine, combine 1 quart cold water & all purpose fish cure at the rate of 1.25 oz for a less salty flavor or 1.5 to 3 oz for a more salty flavor in non metallic brining vessel, still well. add whole fish or fillets, submerge fish, refrigerate overnight, stirring occasionally. Next day remove fish from brine DO NOT RINSE! Lay on drying racks skin side down. Process in usual manner in oven or smoker, smoke/cook at temps starting at 150 F, ending at 170 F. Pan size trout & medium size fillets 6-9 hrs, large fillets upwards of 12-14 hrs. Check often for doneness as smoking time can vary greatly.
