A.C. Leggs Old Plantation Summer Sausage Seasoning is  specially blended to produce a top knotch summer sausage. Stuff into fibrous casings of your choice.  Makes 25 lbs. of smoked product.  Cure not included.  No M.S.G.   
Seasons 25 pounds of meat.

Blended of salt, dextrose, sugar, spices, garlic powder, sodium erythorbate (7/32oz), and less than 2% tricalcium phosphate added as an anti-caking agent.

Suggested Directions For Use:

1)grind meat through 1/4" place. transfer to mixer.
2)add water (3lbs), seasoning and sodium nitrite.
3)mix until the meat block is tacky (6-8 minutes).
4)regrind through 1/8" plate. stuff into casings.
5)process in smokehouse to 155 degrees internal temperature. to manufacture a reduced PH product, use starter culture or encapsulated citric acid and adjust procedures as needed
