Whey powder can be used as a binder.  Produces a richer sausage product.  Generally use 1/2 to 1 cup for each 10 lbs of sausage meat. Net wt. 2 lbs. which yields 6 cups of Whey Powder.

W e have used on sausage however we mostly use it in meatballs for a rich texture.
