Whey powder binds meat and fat together to produce a richer smoother sausage.  Generally use 1/2 to 1 cup for each 10 lbs of sausage meat. Available in 1/2 cup or 6 cup bags.

W e have used on sausage however we mostly use it in meatballs for a rich texture.
