We use this seasoning regularly in our pork breakfast sausage with VERY consistent results.  The last bag we purchased however, was not as expected and our batch of sausage was very spicy.  We will have to cut back on the seasoning for our next batch.  Not sure if maybe the bag was mislabeled or possibly mixed with different ratios. We will still continue to use this mix as our customers really enjoy it.

If you try a small package and liked it, try a large package and save some money on your bulk sausage production!  We love this flavor!

This is hands down, our favorite seasoning for breakfast sausage.  It makes an awesome patty, and is great for biscuits and gravy.

I have been using this seasoning for several years now. My wife used to buy me a local breakfast sausage from the store.
Now she buys me a five pound pork shoulder which I grind up and add Old West seasonings. For a while I would fire up my smoker and stuff the sausage into the casing and smoke.
Last time I ran out of sausage, and was short on time I simply ground the pork and added seasoning plus some dry smoke flavoring and put small egg sized amounts into sandwich bags. I flattened the bags with my hand and used the dull edge of a large knife to separate into "links".... While the meat was inside the bag, then froze.
Let me tell you it sure was a lot faster and easier than my smoker! And the taste is excellent! For a great tasting anytime sausage look no further.... I usually add a teaspoon cayenne pepper per five pounds.... I like it hot!
